These chai-spiced pumpkin cookies are soft, chewy, and packed with the cozy flavors of chai, pumpkin, and warm fall spices. They make the perfect afternoon treat or dessert during the cooler months.

Ingredients
  • 1 1/2 cups flour
  • 1/2 cup pumpkin puree
  • 1/2 cup coconut sugar
  • 1/4 cup coconut oil (melted)
  • 1 tablespoon ground chai tea mix
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon ground ginger
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix together flour, chai spices, cinnamon, ginger, and baking soda.
  3. In a separate bowl, beat together pumpkin puree, coconut sugar, and coconut oil.
  4. Gradually add the dry ingredients to the wet mixture until combined.
  5. Drop spoonfuls of dough onto a lined baking sheet.
  6. Bake for 12 minutes until the edges are set.
  7. Let cool before serving.
Note

To make them more indulgent, add vegan chocolate chips or drizzle with melted dark chocolate.
