Vegan Maple Pecan Apple Crisp

vegan apple crisp, maple pecan dessert, fall apple recipes, healthy crisp recipe

This recipe came to life during a family apple-picking trip last fall. We had bags full of fresh apples, and I wanted to create a dessert that would highlight their natural sweetness. The pecan topping added a perfect crunch, and the maple syrup brought everything together with a subtle richness.

Ingredients
  • 6 apples (peeled and sliced)
  • 1/2 cup maple syrup
  • 1 cup rolled oats
  • 1/2 cup pecans (chopped)
  • 1/4 cup coconut oil (melted)
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ground nutmeg

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, toss the apple slices with 1/4 cup maple syrup, cinnamon, and nutmeg.
  3. Spread the apples in a baking dish.
  4. In a separate bowl, mix oats, pecans, coconut oil, and the remaining maple syrup.
  5. Spread the oat mixture over the apples.
  6. Bake for 30 minutes, until the topping is golden and crisp.
